Stuffed Peppers...for breakfast.
Busy day in the kitchen today, chopping, dicing, whipping, and mixing to prepare food for the week. First thing on the menu was Stuffed Peppers but with a breakfast twist. Take some bell peppers and stuff them with some veggies and eggs, then top with cheese for an omelet in it's own container.
Lots of fun prep work goes into getting things ready. You have to clean the peppers, then start chopping and dicing the mushrooms, onions, and tomatoes. Then get the spinach, feta cheese, and eggs together.
Once everything is prepped you have to get to cooking. Saute the onions, mushrooms, tomatoes, and spinach in a pan so the stuffing is ready to go into the peppers.
Once everything is cooked stuff it into the peppers and pour in the egg mixture.
Put the peppers into the oven to bake until they are tender and the eggs are done. Now you have a tasty breakfast treat for the whole week.
