Sunday meal prep is a perfect time to try new recipes and new flavors, and today was no exception. There was some orzo pasta in the pantry, and this recipe, Mediterranean Orzo Salad, created the perfect opportunity to try a new dish with some really flavorful and colorful ingredients.
In addition to the orzo, the recipe includes red onion, red and yellow tomatoes, garbanzo beans, Kalamata olives, feta cheese, and some fresh parsley.
Once the pasta and veggies are prepped, they get combined in a large bowl and tossed with a bright and citrusy dressing made with olive oil, garlic, lemon juice and oregano.
This makes a tasty and healthy vegetarian meal served with some fresh naan bread and roasted red pepper hummus.
