Poke' bowls, Meatballs, and drinks

Sunday was a busy day in Jane's kitchen.  Normal cooking for the day and meal prep for the week was made a little easier by thinking about some tasty cocktails.

For meal prep this week, we made Honey Sriracha Meatballs over rice noodles or rice with steamed carrots and broccoli.  This is a great dish to make ahead.  The turkey meatballs are baked in the oven and can be frozen with or without the sauce.  An Italian treat with a great Asian twist.

After weekly meal prep was done, the menu turned to a Tuna Poké bowl for a late lunch..  Poké bowls are all the rage these days.  Colorful food is fun to eat and this combination of radishes, carrots, cucumber, purple cabbage and edamame just pops.  And the flavors are great with the spicy ahi tuna over a bed of rice noodles.  

After a fun day in the kitchen what better way to relax than with a drink a two.  First a little whiskey from right here in Texas.  Anything named for an armadillo has to be good.  

Finally sitting down to watch the Winter Olympics with a nice Mojito...maybe that is better for the Summer Olympics or maybe it is just wishful thinking that summer is coming.
